Burger Bowls
Serves 4  |  Prep time:  15 minutes  |  Cook Time: 30 minutes

-1 lb lean, Reil Ranch grass-fed ground beef

-1/2 onion, diced

-1 cup uncooked long grain rice

-1/2 cup pickles, chopped

-1 cup cherry tomatoes, diced

-1 cup shredded cheddar cheese

-yellow mustard to taste

-sugar free ketchup to taste


  1. In a large skillet, brown the beef. Season with black pepper or your favorite burger rub. Drain the meat and set aside.
  2. Cook the rice according to package directions. If using an instant pot, place 1 cup uncooked rice with 2 cups water and press the ‘rice’ setting. When rice is cooked, set aside.
  3. Assemble: on a plate or in a large bowl, place ¼-1/2 cup rice, 3-4 oz meat, and toppings of choice. Top with mustard and ketchup to preference and enjoy!
  4. Optional: set out all ingredients and allow individuals to fix their own burger bowls according to their liking!
