Serves 6-8  |  Prep time: 15 min  |  Cook time: 1 hr and 20 min

Ingredients:

3 lb Reil Ranch grass-fed roast

1 large onion, diced

1 tbsp low sodium soy sauce

2 tsp Worcestershire sauce 

2 tbsp sugar free ketchup

1 tsp black pepper

1 tsp paprika

1 tsp chili powder

1 tsp oregano

¼ tsp cayenne powder

1 tsp garlic powder

1 cup low sodium beef broth

1 cup water

Directions:

  1. In a small bowl, mix together the soy sauce, Worcestershire sauce, ketchup, and spices. Place the roast in the instant pot or electric pressure cooker and pour the mixture over the meat, rubbing it into the roast as needed.
  2. Place the onion around the roast and pour the water and broth over to cover the bottom of the instant pot. 
  3. Close the lid and be sure the valve is set to ‘seal’.
  4. Cook on High Pressure for 60 minutes and let the steam naturally release for 20 minutes after that.
  5. Remove lid and remove the roast. Shred the meat using two forks and enjoy!
