Egg Roll in a Bowl
1 lb grass-fed ground beef
½ head of green cabbage, sliced into thin strips
2 large carrots, peeled and sliced into thin strips
½ large yellow onion, diced
2 tsp olive oil
1 tbsp hoisin sauce
2-3 tbsp low sodium soy sauce
2-3 tbsp water, as needed
Spicy Mayo Topping:
1/3 cup mayonnaise
1 tbsp sriracha sauce
- In a large skillet, heat the olive oil on medium high heat. Add the ground beef and cook until only slightly pink. Add the onions and carrots and continue to cook on medium high for 5 minutes.
- Add the cabbage and stir. You may need to add the cabbage in batches as it wilts down.
- After a minute or two, add the hoisin and soy sauce. Continue cooking on medium high until the cabbage and carrots have softened. Add water as needed to help cook.
- Combine the ingredients for the spicy mayo sauce and top each plate with the sauce for an optional kick! Serve with brown rice and more vegetables for a well-rounded meal.
