Ingredients:

2 tsp olive oil

2 medium sweet potatoes, sliced

1 lb Reil Ranch grass fed ground beef

1 red onion, sliced

2 jalapenos, seeded and diced

2 cloves garlic, minced

¼ cup lime juice

1 tsp cumin

1 tsp chili powder

1 tsp paprika

½ tsp black pepper

Optional toppings: salsa, plain greek yogurt, shredded cheddar, guacamole


Directions:

  1. In a large skillet, heat the olive oil over medium high heat. Add the onion, jalapenos, and sweet potatoes and cook until tender, about 7 minutes.
  2. Add the ground beef and cook until browned and cooked through, about 8 minutes. Add the garlic and spices and continue to cook for another minute or two.
  3. Add the lime juice and reduce heat to medium low. Toss and cook for an additional minute, until the potatoes are soft and the juices have mostly evaporated. Sprinkle with cheese if desired, pair with a non-starchy vegetable and enjoy!
